Then the must obtained is put into barrels and spends at least 12 years aging, for this purpose Modena vinegar producers use barrels of different woods and capacities, which allows passing the vinegar from one to another, mixing in turn different vintages.

This is why the larger barrels contain the newest vinegar, which is transferred in batches to the smaller barrels. According to the regulations of the PDO regulatory council, only 30% of each barrel is allowed to be refilled, which allows the younger vinegar to be mixed with the older one.
