Production of Prosecco Valdobbiadene wine

Prosecco Valdobbiadene is made mainly with Glera, which in turn can be accompanied by verdiso, bianchetta, trevigiana, perera, glera lunga, chardonnay, pinot bianco, pinot grogio and pinot nero.

The grapes are harvested, pressed and fermented to obtain a dry wine, then placed in a large stainless steel tank along with a mixture of sugar and yeast.

This is sealed and the secondary fermentation that generates the bubbles is carried out under controlled conditions and then bottled.

Production of Soave Classic wine

Soave wine is made in vineyards located at an altitude of 250 meters above sea level on gently sloping hillsides with volcanic soil. It uses the Garganega grape, but Chardonnay and Pinot are allowed to accompany it.

Once manually selected, the grapes are left to rest for 4 to 6 months and then pressed. They are fermented in barrels slowly and for a long period of time.

Valpolicella Superiore wine making process

Valpolicella Superiore is made mainly with Corvina grapes and is accompanied by Rondinella and Molinara grapes. After crushing, the skins remain in contact with the must for 24 hours to give it color and aroma.

Fermentation takes 7 to 10 days at a controlled temperature to maintain the fruity aromas of the wine, and to soften its acidity, a natural lactic fermentation is carried out in steel.

The wine is aged for 6 months in barrique and 4 months in bottle, which allows it to balance on the palate.

Winemaking of Valpolicella Ripasso wine

The Valpolicella Ripasso is made with Corvina grapes together with Rondinella and Molinara, its process is particular since the fruit is gently pressed which is then reused and added to the Valpolicella vat for 10 to 15 days so it has a moderate alcoholic content.

Amarone is the King of Italian wines made from Corvina grapes, which thanks to its thick skin and its resistance to some diseases, in addition to the climatic conditions of the region.
