There is a diversity of liqueurs that go around the world, some of them come naturally, and others are elaborated by applying different methods. Within this great diversity, palm wine is one of them. African and Oriental cultures place palm wine as one of their favorite beverages and although it does not have a strong alcoholic content, it does have great flavor and potential.

Palm wine is a beverage elaborated in different regions of the world, its main ingredient is the sap of different types of palm trees. Its alcoholic content is usually low and it goes through a natural fermentation process that gives origin to this exquisite liquor.

Types of Palm Wine

Thanks to the diversity of palms that exist and the different places where it is produced, we can find different types of palm wine, which are:

Kallu

It is a toddy style palm wine that is created from the sap produced by the flower buds of the coconut palm. It is produced in the state of Kerala, in the south of India. Its method of elaboration consists of climbing the trees three times a day to collect the sap by cutting the buds to gain access. After collection, the sap is left to ferment throughout the day, usually reaching 6% alcohol content during this process. Kallu starts with a frothy, sweet coconut flavor, and over time becomes stronger and more sour.

Matango

It is a type of palm wine made in Cameroon from the sap of various palm trees and although it has no alcohol, the more it is left to ferment, the higher the alcohol content will be. Its elaboration method is very similar to that of Kallu, the trees are climbed, the barkis cleaned and cut to block the development of the flower and favor the formation of a natural deposit where the sap of the plant accumulates.

Burmese Toddy Wine

It is a palm wine made from the sap of the palm trees, which is collected by means of reeds and left to ferment. The initial palm wine sap is boiled into a form of palm sugar known as jaggery which is dropped into pots filled with water and fermented sticky rice.

The sugar activates the sticky rice yeast, initiating the fermentation process that lasts several days, before being poured into clay pots that are placed over a charcoal stove. Iron factories filled with water are placed above the surface causing condensation, which is Burmese Toddy wine, a liquor similar to Chinese rice wine, and not to be drunk lightly.

Nkwu Ocha

It is a palm wine made in Nigeria, using the sap of the raffia, another species of palm tree. This liquor is considered the main social drink in Nigeria. For its elaboration it is necessary to climb the trees to collect the sap. Nkwu Ocha is an alcoholic beverage almost as strong as a beer with the fizzy quality of soda without the sugar.
